Scrambled egg with tomato and mozzarella bites

This delicious scrambled egg recipe is an easy breakfast meal or even the perfect light lunch.


  • 2 eggs
  • 40ml cream
  • 1 medium size tomato
  • 40g mozzarella
  • Chives (optional)
  • Basil leaves (optional)
  • Balsamic glaze
  • Olive oil


  1. Mix eggs with cream
  2. Cut tomato into 4 equal sizes
  3. Cut 4 slices of mozzarella
  4. Stack them on top of each other
  5. Bake for about 15 minutes at 180 degrees
  6. When tomatoes are almost ready, heat oil in pan and scramble eggs
  7. Top eggs with chives
  8. Drizzle a bit of balsamic glaze over tomato bites
