
Ingredients:
- 2 eggs
- 40ml cream
- 1 medium size tomato
- 40g mozzarella
- Chives (optional)
- Basil leaves (optional)
- Balsamic glaze
- Olive oil
Method:
- Mix eggs with cream
- Cut tomato into 4 equal sizes
- Cut 4 slices of mozzarella
- Stack them on top of each other
- Bake for about 15 minutes at 180 degrees
- When tomatoes are almost ready, heat oil in pan and scramble eggs
- Top eggs with chives
- Drizzle a bit of balsamic glaze over tomato bites
