
Ingredients:
- Half a cup almond flour
- 1 egg
- 1kg chicken breast (skinless)
- 2 tbsp Olive oil
- 2 tbsp smoked paprika
- 2 tbsp garlic powder
- 40g rocket
- 40g parmesan
- 1 lemon
- Salt & pepper to taste
Method:
- Whisk the egg in a bowl
- Combine almond flour with smoked paprika, garlic and salt
- Dip 1 chicken piece at a time in the egg and then coat with the flour.
- Once all pieces are coated, start frying them in the olive oil for about 15 minutes. Turning regularly
- Divide rocket leaves between plates
- Divide parmesan between plates and sprinkle over rocket
- Squeeze fresh lemon over salad
