Almond crusted chicken with rocket, parmesan salad

Running out of meal ideas for chicken? Try Frenene's scrumptious almond crusted chicken recipe with a rocket and parmesan side.

Ingredients:

  • Half a cup almond flour
  • 1 egg
  • 1kg chicken breast (skinless)
  • 2 tbsp Olive oil
  • 2 tbsp smoked paprika
  • 2 tbsp garlic powder
  • 40g rocket
  • 40g parmesan
  • 1 lemon
  • Salt & pepper to taste

Method:

  1. Whisk the egg in a bowl
  2. Combine almond flour with smoked paprika, garlic and salt
  3. Dip 1 chicken piece at a time in the egg and then coat with the flour.
  4. Once all pieces are coated, start frying them in the olive oil for about 15 minutes. Turning regularly
  5. Divide rocket leaves between plates
  6. Divide parmesan between plates and sprinkle over rocket
  7. Squeeze fresh lemon over salad
